Cleansing steamed veggie bowl, with ginger-mint-tahini dressing

Some lightly steamed veggies topped with a creamy and flavorful ginger-mint tahini dressing makes for a spectacular and super healthy meal.

You can make dishes that are cleansing, and also nourishing and delicious at the same time. Let’s make it happen…

Cleansing steamed veggie bowl, with ginger-mint-tahini dressing

Prep time:
Makes 1 serving

Ingredients

  • 1 cup diced butternut squash
  • 1 cup kale, chopped
  • 1 cup peas
  • 1 cup broccoli, chopped
  • 2 Tbsp walnuts or sunflower seeds
  • 2 Tbsp chopped nori (sushi rolling sheet)
  • 2 Tbsp Ginger Tahini Dressing

Ginger Tahini Dressing Ingredients

  • 1 Tbsp tahini
  • 1/2 lemon – juice
  • 1 Tbsp fresh mint – minced
  • 1 tsp fresh ginger – grated

Directions

  1. Chop the veggies and put in a steaming basket, or in a pot with a small amount of water. Start with the squash for 15-20 min, then add the kale and broccoli for a few minutes at the end.
  2. While the veggies cook, make the dressing by pureeing or whisking everything until smooth.
  3. Drizzle with dressing and nuts or seeds. Cut the nori with scissors to sprinkle on top.
